Perfect Morning Waffles

My two kids look forward to our weekend brunch all week. If we have something scheduled for the weekend that prevents us from having a family brunch, you would think the world was ending! In general, my wife and I opt for healthy recipes such as flax and wheat germ waffles and although my kids tolerate that level of healthiness, their breakfast of choice is this amazing waffle recipe. They are crisp on the outside, soft on the inside and sinful to eat. I often feel like I’m eating a funnel cake for breakfast, so I usually stick with one myself. But if you really want to indulge, this is the recipe you’ll want to make.

We usually cut us a few strawberries and drizzle these waffles with pure maple syrup.

  1. Mix together all of the dry ingedients in a large bowl.
  2. Seperate the eggs and add only the yolk to the dry ingredients mixture. Place the egg whites in a seperate bowl that is large enough to beat.
  3. Beat the egg whites until moderately stiff and set them aside to add later.
  4. Add milk and melted butter to the dry mixture and blend it together.
  5. Fold the egg whites into the mixture.
  6. Add waffle mix to your pre-heated waffle iron and cook until crisp.
