Authentic Mexican Style Ceviche

Spring is almost here and that means getting ready to take a Spring break vacation with our kids. We’ve taken a number of trips to Mexico and one of my favorite dishes is Ceviche. There’s nothing better than a big bowl of ceviche drenched in lime with some freshly fried tortilla chips and an ice cold margarita. This ceviche recipe is a great dish for entertaining.  We always get rave reviews when we serve it. Feel free to make it with your favorite fresh fish or even throw in a variety of fish or shrimp to make it your own.

  1. Dice your fish or if you're using shrimp you can keep them whole. Squeeze the juice from your limes and pour it over your fresh fish in a medium size bowl. Cover the bowl and place it in the refrigerator for about three hours. Some people recommend only 20 minutes or so, however, we've found that isn't enough time.
  2. Remove the fish from the refigerator and pour off all of the lime juice. You can throw the juice away. Remove the seeds from your tomato and cucumber. Dice all of your vegetable. Add the tomtato, onion, cilantro, salt and pepper to taste, clam-tomato juice, hot sauce and chile if you're using it.
  3. Serve with tortilla chip.
